How do we do it? We manage costs and labor daily using our proprietary CGS and labor trackers. We develop recipes and portion controls for each menu item. We create fun menus (remember our remarkable discussion?) yet change them often. Daily specials are created to further increase sales and offer the customer variety. Our kitchens are kept to the highest safety and cleanliness standard using a 34-point inspection process. All food and beverage servers are trained using Affiniti’s Serving Alcohol manual.
In addition to daily dining operations, we promote and host hundreds of wedding receptions, rehearsal dinners, and special events each year, the most profitable food and beverage events at a club.
